Tips to Perfecting Your Holiday Turkey

Higher temperatures will cause the turkey to dry out, so it’s important to cook for a long time at a low temperature, while getting the turkey to a safe temperature.
Do not overestimate the cooking time of a turkey. Avoid this by using a thermometer and inserting it into the thickest part of the thigh when the meat is nearly done. When the thermometer reads 165, you’ll know when your turkey is cooked to perfection.
It’s crucial to give yourself time to defrost the turkey before cooking. A minimum of two days is recommended. Make sure the turkey is kept at a safe temperature during the thawing process to prevent bacterial growth that may lead to foodborne illness. Depending on the size of the turkey, the time frame for thawing varies. Never thaw a turkey at room temperature on your kitchen counter or in hot water. Instead, put it in the fridge and let it thaw!
Season your turkey a day in advance to let the flavour sink in (make sure the turkey is defrosted). The last thing you want is a turkey that tastes bland. Salt is a great place to start, but there are many ways to season your turkey for optimal flavour.
